Diamond E Collective, a new restaurant, venue, and hub for community gatherings, has opened its doors in downtown Rapid City. Nestled in the former Bashful Bison location at 523 Main Street, it’s a place where friends can come together and create lasting memories.
Cindy Tolle of Evergreen Ranching and Livestock is the owner of Diamond E Collective. In true start-up fashion, Shasta Knight described herself as a “manager of sorts.”
“We felt downtown needed a place with great, fresh, locally-sourced foods that people feel welcome to bring children in with them,” Knight explained.
The menu at Diamond E features farm-to-table items. It currently offers a small, carefully curated selection of farm-to-table menu items with plans to expand as they connect with local suppliers for ingredients. The first week’s menu included sliders and cheeseburgers made with local grass-fed beef from Evergreen Ranch. Additionally, they have Osso Bucco, which was made in collaboration with Rebecca Christensen, chef at Buffalo Dreamer in Hot Springs. Daily beverage options include fresh-squeezed lemonade, coffee, and unsweetened iced tea.
Beyond the food, Diamond E Collective aims to be a place that supports local artists. The décor features local artists’ work. They also book musicians and stand-up comics and host open mic nights to bring a new entertainment option downtown.
The restaurant is also intentional about creating a family-friendly environment. There is a free library inside, and will extend to an outdoor library as the weather warms. In the corner, there is a “kids corner” where children are welcome to play.
“It is slowly evolving to fill our ideas for what it could be,” added Knight.
