“As a kid, I would watch the Food Network instead of the Disney channel,” says Jess Tolman-Stickney, owner of Rapid City’s newest food truck, Fika. After working several food service jobs, entrepreneurship seemed like a natural next step. Mentorship and support from industry veterans fueled Jess’ confidence to leap into business ownership by acquiring a food truck. “Justin and Brooke at Bokujo and BB’s taught me so much, and they were so supportive when I told them I was going to buy a food truck and venture out on my own,” she said. “Rebecca and the whole team at Buffalo Dreamer really gave me the confidence to chase down this dream as well.”
Fika, pronounced “fee-ka,” seeks to transform the Black Hills food scene with its upscale brunch offerings, adding a sophisticated twist to traditional breakfast items. The menu features unique dishes such as breakfast corn dogs with orange blossom syrup and lemon mascarpone French toast with a blueberry compote. Beyond the menu, Fika aspires to foster community engagement through collaborations with local breweries and a commitment to sourcing ingredients locally, showcasing what the Black Hills offers.
The concept of Fika goes beyond being merely a business; it’s inspired by the Swedish tradition of taking a break to enjoy coffee and pastries with friends—a practice Tolman-Stickney first encountered during a study abroad in Sweden. She envisions the Fika food truck as a gathering place for people to enjoy quality time together. “I’m hoping that the Fika food truck can be a place for folks to gather and enjoy quality time together,” she states.

As the food truck navigates its inaugural year, Jess looks forward to blending passion with lifestyle, allowing for travel and exploration while contributing to the local food landscape. “Right now, we’re on Instagram (@time.to.fika).
